dc.description.resumo | Óleos e gorduras são alimentos essenciais à dieta humana, porém, o impacto negativo cau- sado por seu consumo excessivo é motivo de grande preocupação no cenário mundial. Óleos ricos em diacilglicerol possuem características organolépticas muito semelhantes àquelas presentes nos óleos comestíveis convencionais, porém, esses óleos não tendem a se acu- mular no organismo, mesmo se consumidos em altas quantidades, tornando-os um grande recurso no combate à obesidade. O óleo de girassol está entre os óleos comestíveis mais consumidos no mundo e também é, naturalmente, um dos mais saudáveis. Esse trabalho teve como objetivo avaliar a influência do ultrassom na hidrólise enzimática do óleo de girassol com a enzima phospolipase A1 (Lecitase Ultra) e utilizar modelagem matemática para obter simulações de processos de produção de um óleo rico em diacilglicerol. O ultrassom gera emulsões de água em óleo, aumentando assim a área interfacial do sistema e produzindo maiores taxas de reação em relação aos processos enzimáticos convencionais. A hidrólise parcial do óleo de girassol foi realizada em meio livre de solventes, em períodos de 4 h, em temperaturas variando de 30 a 50 °C, frações enzima/substrato entre 0,6 e 4,0% (m/m) e fração água/óleo fixa em 5% (m/m). Para isso, foram desenvolvidos dois planejamentos ex- perimentais fatoriais e um delineamento central composto rotacional. Resultados mostraram condições ótimas reacionais em 40 °C e 1,7% (m/m). Posteriormente, com os parâmetros óti- mos fixos, a fração água/óleo foi avaliada no intervalo de 2 a 10% (m/m) em um período de 12 h para a obtenção de cinéticas reacionais. Através de modelagem matemática aplicada às cinéticas reacionais, demonstrou-se que, entre as frações testadas, a razão água/óleo de 2% é a mais favorável para a produção de diacilglicerol, e a quantidade máxima deste produto é obtida aos 27 minutos de reação. | por |
dc.description.abstract | Oils and fats are essential foods to the human diet, nevertheless, the negative impact caused by its overconsumption is of great concern worldwide. Diacylglycerol rich oils have orga- noleptic features very similar to those found in conventional edible oils, however, these oils do not tend to accumulate on the body, even when consumed in high quantities, becoming a great resource in the fight against obesity. Sunflower oil is among the most consumed edible oils in the world, and also, is naturally one of the healthiest. This study s goal was to evalu- ate the influence of ultrasound on the enzymatic hydrolysis of sunflower oil with the enzyme phospolipase A1 (Lecitase Ultra) and use mathematical modeling to obtain simulations of production processes of a diacylglycerol rich oil. Ultrasound generates emulsions of water and oil, thus enhancing the system s interfacial area, and producing higher reaction rates compared to conventional enzymatic processes. Sunflower oil partial hydrolysis was carried in a solvent free environment, in 4 hour periods, with temperatures varying from 30 to 50 °C, enzyme/substrate fractions between 0,6 and 4,0% (m/m) and a fixed water/oil fraction of 5% (m/m). with this goal in mind, experimental designs were developed. Results showed optimal reaction conditions on 40 °C and 1,7% (m/m). Subsequently, fixing the optimal parameters, water/oil fraction was evaluated between 2 and 10% (m/m) in a 12 hour period in order to obtain reaction kinetics. Applying a mathematical model to the kinetic curves it was possible to demonstrate that, for the tested fractions, the 2% water/oil ratio is the most favorable to the production of diacylglycerol, and the maximum quantity of this product is obtained at 27 minutes of reaction time. | eng |
